This Savagnin “Sous Voile” from Domaine de la Touraize is a classic example of Jura’s traditional oxidative style. Made from grapes grown on blue marl soils at 300 meters altitude in the Arbois appellation, the wine undergoes a long 30-month ageing process under a veil of yeast ("sous voile") in 228L barrels. This method protects the wine from full oxidation while giving it a distinctive character.
The result is a biodynamic and natural white wine with complex notes of dried fruits, walnuts, spice, and a touch of salinity. Its vibrant freshness balances the oxidative depth beautifully. Made from 30-year-old vines and fermented with native yeasts, it reflects both careful vineyard work and minimal intervention in the cellar.
Ideal with festive dishes like sauced poultry, mushroom-based recipes, curry, or a wedge of Comté, this wine is a true taste of Jura tradition.
