Vin Yône is Didier Grappe’s take on the classic Jura vin jaune style, made from 100% Savagnin grown on clay and limestone soils around Saint-Lothain. The grapes are harvested slightly late, then fermented with native yeasts and left to age for a full 75 months in small 228-litre barrels, under a natural veil of yeast (sous voile). Because it doesn’t follow every rule of the appellation, it can’t be called Vin Jaune – hence the playful name “Vin Yône”.
This long, oxidative ageing gives a deep golden colour and layered aromas of hazelnut, orange peel, candied fruit, honey and warm spice, with a clear mineral note. The wine is bottled unfiltered, with no added or only minimal sulfites, staying very close to its natural character.
At the table, Vin Yône is brilliant with aged Comté and other hard cheeses, smoked fish, seafood risotto or white meats. It is already fully ready to drink, but can also rest in the cellar for many years.
