Dasca Vives Ancestral is a delightful sparkling wine from Catalonia, Spain, crafted with care and respect for nature. Produced using traditional methods and biodynamic principles, this bubbly blend features 80% Cartoix (Xarel-lo) and 20% Macabeo grapes, carefully harvested by hand. Fermentation starts spontaneously with natural yeasts in stainless tanks, finishing directly in the bottle, where the wine matures for one year on the lees, enhancing its unique flavors and fine bubbles.
Expect refreshing notes of crisp green apple and aromatic orange blossoms, complemented by a delicious finish reminiscent of Spanish flan, creamy cashews, and subtle hints of hops. Dasca Vives Ancestral is vegan-friendly, free from added sulfites, and showcases an authentic, artisanal approach to winemaking.
