Sin Bulla is a white wine made from Palomino Fino, grown on the calcareous Albariza soils of Sanlúcar de Barrameda, a place famous for its connection to Manzanilla wines. The grapes come from the renowned Miraflores vineyard, harvested by hand and traditionally foot-trodden. A short skin maceration gives the must extra texture before it is pressed in a manual vertical press.
Fermentation takes place in an old Manzanilla barrel, where the wine also ages for several months. During part of this time, a light veil of flor yeast develops, adding a subtle salty and nutty character. The result is a dry, mineral wine that carries the freshness of the Atlantic, with notes of citrus, chalk and a touch of sea breeze.
Sin Bulla is both a reflection of its origin and a personal project of winemaker Juan Jurado Gómez, who set out to explore the full potential of Palomino beyond fortified wines. This bottle captures a pure and lively expression of Jerez, made with minimal intervention and a clear sense of place.
