Jaroslav Osička

Jaroslav Osička is a small family winery in Velké Bílovice, South Moravia, close to the borders with Austria and Slovakia. The estate farms around 3 hectares, and the work is shared by the family—Jaroslav, his wife Věra, and their sons (including Luboš, who is closely involved today).

Jaroslav is well known in the Czech natural wine community not only for his wines, but also for his years as a teacher of viticulture and winemaking. Many younger winemakers learned from him, and he encouraged careful farming and minimal intervention long before it became common.

In the vineyards, the focus is on healthy soil and biodiversity. They work organically and avoid herbicides, pesticides, and other systemic chemicals. Yields are kept low, and most work is done by hand. The winery is connected with the Autentisté movement, which supports honest farming and wines made with as few additions as possible.

In the cellar, the same thinking continues: grapes ferment with native yeasts, wines mature in wood for a long time (often 12–36 months), and they are bottled without fine filtration. Sulphur is usually not used, or only added in a small amount right before bottling. The family began bottling wine from their own grapes in 2008, after years of growing fruit for others.

Many wines are dry and built for patience, shaped by slow ageing in a historic underground cellar that stays naturally cool and stable.
