Apoï by Voï Vignes is a red wine from the slopes of Mount Olympus, in the village of Krania, Greece. It comes from a tiny vineyard called Papous, planted in 1944, where old vines of Xinomavro, Stavroto, and Krasato grow in slate soils at 400 meters above sea level. The vines are farmed with permaculture practices, and everything is done by hand, including harvesting.
The 2020 vintage was shaped by a very dry and hot season, with over 40 days above 40°C. Despite the extreme conditions, the grapes were harvested late, at the end of November. The wine was made with whole bunches, underwent a long 45-day maceration, and fermented naturally with native yeasts. After fermentation, it spent 36 months ageing in old barrels before being bottled without filtration or additives.
Only 450 bottles were produced, making Apoï a rare and authentic expression of its place.
