El Carbonero is an organic white wine made entirely from Macabeo grapes grown on dry-farmed vines that are 43 years old. These vines thrive in sandy, limestone, and marl soils at 700 meters above sea level in Las Monjas, Valencia. Produced naturally with meticulous care, the grapes are harvested by hand and fermented for a full month with their skins, resulting in a wine that captures authentic flavors without additives, clarification, filtration, or added sulfites.
This wine presents a beautiful golden-yellow color and an inviting aroma with floral notes, hints of fennel, baked apple, dried apricot, and touches reminiscent of dry hay. Fresh and pleasant on the palate, it delivers a fruity experience complemented by medium-length finish, with subtle citrus bitterness and a rounded aftertaste.
Perfectly paired with starters, fatty fish dishes, light meats, rice, or pasta, El Carbonero offers a genuine taste of Spain’s Valencia region.
