Roto is a very original white from Bierzo, made entirely from Palomino Fino – the grape better known for sherry – here reimagined as a still, dry wine. The grapes come from a tiny 0.5-hectare vineyard in Cobrana, planted with 90–100-year-old bush vines on very degraded slate and red clay at 750 metres of altitude.
After a spontaneous fermentation in stainless steel, the wine spends about a year and a half in old Manzanilla casks from Jerez, ageing under a veil of flor (a natural layer of yeast, just like in fine sherries). This gives Roto its marked salinity, notes of chamomile and lemon peel, and a very fine mineral edge.
On the palate it is dry, precise and very fresh, with vertical acidity and a long, savoury finish that feels both sharp and clean. A characterful, small-production Palomino that shows Bierzo’s slatey hillsides in a completely different way, perfect for those who enjoy salty, mineral whites.
