1200 XXIII Rosado is a clarete from the Alpujarra Granadina, made from Jaén Blanco, Jaén Tinto and Vigiriega. The grapes come from 70-year-old vines planted on slate soils at 1,200 metres, a height that helps keep freshness and balance in the wine.
After whole-cluster pressing, the wine ferments in clay amphora and then rests for 12 months in small 54-litre demijohns. This careful ageing gives it a calm, handmade character without making it feel heavy. It is a rosado with a mountain origin, old-vine depth and a clear link to traditional ways of working.
