Chkhaveri from Pheasant's Tears is an inviting red wine crafted in the traditional Georgian method, originating from the remote highland vineyards of Adjara near the Black Sea. Grown organically on clay and granite soils at 500 meters above sea level, Chkhaveri grapes benefit from a unique mountainous climate. The wine is spontaneously fermented using native yeasts and briefly macerated for one week in stainless steel tanks before being aged for nine months in traditional Georgian qvevri (clay amphorae buried underground), with careful decanting every three months. Minimal intervention and no filtration or clarification preserve the wine’s authentic character.

Expect playful aromas of ripe red fruits, candied cherries, subtle hints of black tea, walnut husk, and earthy mineral notes. On the palate, Chkhaveri is fresh, lively, and easy-drinking, with gentle tannins and a pleasant, long finish. Ideal for pairing with game dishes or enjoyed on its own, it showcases a genuine taste of Georgian winemaking tradition.
