Oliver II is an orange wine from Balatonboglár, made mostly from Irsai Olivér with a touch of Furmint. The vines grow on cooler sandy soils with loess and loam, which help keep good freshness in the wine. Spontaneous fermentation starts in separate vessels: the Irsai spends several days on the skins in tank, while the Furmint is partly fermented as whole bunches in 500 L barrels and amphora.
Afterwards, the wine rests for a long time on its fine lees, adding texture and depth. It is bottled unfiltered and unfined with only a small amount of sulphur, keeping a very pure and direct expression. Expect a dry, aromatic and lively wine with gentle grip from the skin contact. Serve lightly chilled around 11–12 °C and enjoy it over the next 3–4 years.
