Belo is a white blend from Collio, made with Friulano, Ribolla Gialla, Malvasia and Pinot Blanc. It was born from a difficult season, when hail left too few grapes for the usual Waldo wine, so the remaining fruit was turned into a lighter, younger cuvée with its own character.
The Ribolla Gialla is made with a short carbonic maceration, while the other grapes are pressed directly. Fermentation is spontaneous, and the wine ages in concrete and large oak barrels, without clarification or filtration. In the glass it is fresh and direct, with notes of citrus, green apple, white flowers, a light herbal touch and a slightly spicy, savoury finish. It is easy to enjoy with seafood, sushi, fresh cheeses, prosciutto or simple vegetable and poultry dishes.
