Dopamin

Dopamin is Milan Nestarec’s cloudy feel-good white, built to drink by the glass and take the pressure off your day. It’s mostly Grüner Veltliner with Chardonnay and Riesling from the Slovenské vineyard in Moravia, farmed organically and picked by hand.
The wine grows in a single large oak cask, topped up every year in a kind of solera system. It began as a blend of whites that didn’t fit into other barrels and has since become its own living cuvée: foot-stomped, given a short overnight maceration, slowly pressed, then left to ferment and age spontaneously. It’s bottled unfined, unfiltered and without added sulphur, so a light haze in the glass is part of the charm.
In the mouth, Dopamin is mineral and gently salty, with bright notes of green and golden apple, pear, candied lemon and a hint of fennel and subtle nuttiness from the time in barrel. Great with tempura vegetables, lemony dishes or simple roast chicken.
