Běl is Milan Nestarec’s easy-going Moravian white, made for everyday drinking and sharing. It’s a 1-litre bottle of fresh, summery wine built from “common” local grapes – mainly Grüner Veltliner with Welschriesling and Müller-Thurgau – just like the traditional village blends people used to drink by the glassful.
The grapes come from organically farmed vineyards on sandy loess soils around Velké Bílovice and Moravský Žižkov. They’re harvested relatively early and pressed as whole bunches, very gently, then fermented with native yeasts in stainless steel and old wooden tanks. The wine is left unfined and unfiltered with only a tiny touch of sulfur, so a light cloudiness in the glass is part of its character.
In the mouth, expect bright lime and lemon notes, crunchy green apple, juicy acidity and a little grip from the skins that keeps it refreshing rather than simple. Běl is the kind of bottle you open with any crowd, without overthinking it.
