La Vereda is a dry white wine from Miguel Castro made from Pedro Ximénez, showing a different side of this local grape. It comes from old bush vines in Vereda del Cerro Macho, a high area of the Sierra de Montilla spread between Río Frío Alto and Benavente Alto. Because the vineyards sit at different orientations and altitudes, the wine brings together several expressions of the same place.
The soils here are very calcareous albariza, which helps the vines cope with the warm climate and gives the wine a clear saline, mineral edge. Most of the wine is fermented in stainless steel, with a smaller part fermented in barrel, and then it spends 6 months on fine lees. This gives extra texture without losing freshness.
Expect a white wine with citrus and light yeast notes, a fluid palate, and a clean, slightly salty finish. It also has no fining treatments, so some natural sediment can appear in the bottle.
