Mátyás Ösztövér is a distinctive orange wine from the sunny village of Kisújfalu, Slovakia. Its name, Ösztövér, historically describes the dry and sparse character of the land, perfectly matching the hot, dry microclimate of the Strekov region. The wine is organically certified and carefully crafted through low-intervention, traditional methods, including spontaneous fermentation and aging for eight months in Hungarian oak barrels. The blend uniquely combines Sauvignon Blanc, Gewürztraminer, Chardonnay, and the lesser-known Feteasca Regala grape, each variety macerated differently—from three days to three weeks—to highlight their best characteristics. The Chardonnay grapes undergo a special "sandwich method" fermentation, layering whole bunches between crushed grapes, resulting in a juicy, slightly tannic profile with aromas of dried herbs, lychee, and orange blossom. Best enjoyed chilled, this vibrant and friendly wine pairs excellently with grilled fish, fried chicken, grilled vegetables, or simply as an enjoyable glass on its own.
