Coume de l'Olla tinto comes from high-altitude vineyards (450-650m) with iron-rich red soils in Roussillon. This natural wine blends Red Grenache (60%) with Grey Grenache (20%) and Macabeo (20%), co-fermenting them with native yeasts. Created by New Zealand-born winemaker Tom Lubbe, who learned his craft in South Africa before founding Matassa. The wine ages for 7 months in concrete tanks, resulting in a fresh, vibrant character despite the warm climate.
