Coume de l'Olla blanco comes from restored high-altitude vineyards (500-600m) in Roussillon, where iron-rich clay-limestone soils impart distinct character. This natural white wine combines Muscat Petit Grain, Macabeo, and White Grenache. The whole grapes undergo an unusual two-week maceration before fermenting with indigenous yeasts. Eight months of aging in concrete tanks follows. Created by Tom Lubbe and Nathalie Gauby at their Matassa estate. Pairs well with stews and hotpots.
