Matassa Ace of Spades comes from the Les Myrs plot in Roussillon, where Carignan and Mourvèdre grow on volcanic soils with black marl. This soil gives the wine a clear earthy side, with light smoky touches that sit beside notes of red fruit, forest berries and gentle spice.
The winemaking is low-intervention: the grapes are handled by hand, fermented with native yeasts and bottled without fining or filtration. A short maceration keeps the wine fresh and lively rather than heavy. It is a good choice for those who enjoy natural wines with energy, depth and a slightly wild Mediterranean character. It works well with mushrooms, grilled vegetables, game or marinated meats.
