Le Temps des Cerises La Peur du Rouge is a unique natural wine made from 100% Chardonnay, grown on limestone soils in the Orb Valley, Languedoc-Roussillon. Axel Prüfer, a German-born winemaker who has worked in this region since 2003, hand-harvests the grapes over several passes to balance ripeness, sugar, and acidity.
After direct pressing, the wine undergoes spontaneous fermentation and is aged for six months in stainless steel tanks. It’s bottled without fining, filtration, or added sulfites. Expect fresh notes of orange citrus, a hint of bruised apple, and a touch of earthy, honeyed minerality. The texture is lively, making it a refreshing and honest expression of its terroir.
