La Morisca is a still white wine made entirely from Palomino, from an old vineyard in the lower part of Miraflores in Sanlúcar de Barrameda, planted on the chalky albariza soils typical of Jerez. It shows Palomino in a clear, dry style: gentle stone-fruit notes, a delicate texture and a savoury, saline finish.

What makes it stand out is its careful ageing. The grapes are hand-harvested at night, then fermented with native yeasts in large chestnut casks that were previously used for Manzanilla. The wine then rests under a light veil of flor, the natural yeast layer known from sherry country, before finishing on fine lees in steel. The result is a fragrant white with freshness, subtle flor character and a strong sense of place.
