La Carallada is a red wine from Ribeira Sacra, produced by La Furtiva on slate and pink granite soils. This wine combines the local Mencía grape (90%) with traditional Galician varieties Caiño, Sousón, and Garnacha Tintorera. Made following natural wine principles with minimal intervention, it ferments with indigenous yeasts using 80% whole grape harvest. The wine matures for 10 months in French oak barrels. Pairs well with meat dishes, especially red meat.
