Controlled Chaos began as an experimental cuvée, and the name still suits it. The wine is based on a changing blend of red and white grapes: whole-bunch Pinot Noir is placed in tank and filled with direct-pressed Pinot Gris juice, then fermented briefly on the skins. After that, it is aged partly in barrel and partly in amphora, with no added sulphur.
The grapes come from volcanic sites around Balaton, including Mount St. George for Pinot Noir and Mount Csobánc for Pinot Gris. They are grown organically, using compost, herbal sprays and work timed with the astronomical calendar. In the glass, this is a fresh, juicy red with a lively crunch and an easy-going character. It is a good match for chicken paprikás or other simple, flavourful dishes.

Vinification: Whole bunch Pinot Noir went into fiberglass tanks, filled up with direct pressed Pinot Gris juice. Fermented on the skins for 7 days, then the free run was moved to a 600 l barrel and a 500 l amphora. Aged 8 months, bottled in May 2026. No added sulphur.
