Controlled Chaos by Kolónia 52 is all about blending red and white grapes to find surprising harmony in each new vintage. Originally an experimental cuvée in 2019, it captures the spirit of embracing nature’s spontaneity in winemaking. The grapes, including Pinot Noir and sometimes Chardonnay or Furmint, come from vines rooted in volcanic basalt with limestone layers around Lake Balaton—an area known for its mineral-rich soils. By using mostly whole-bunch fermentation and careful aging in barrels or amphora, the winemakers preserve bright berry notes from the red grapes while adding a subtle crispness from the whites. This lively style pairs beautifully with chicken paprikás, a nod to its Hungarian origins. Low-intervention methods and biodynamic principles enhance the wine’s honest character, making each sip feel fresh and approachable. It’s a unique choice for those who want to explore Hungarian wines that blend tradition with creativity.
