Dédalo Pieles is an orange wine crafted from 100% Airén grapes grown on century-old vines in Castilla-La Mancha. Following a unique process, half of the grapes ferment in 300-year-old underground clay vessels, a technique that keeps ancient traditions alive. The wine spends four months on its skins, developing a deep golden hue and a rich, tannic structure. With no initial sulfite additions and native yeast fermentation, it offers natural complexity. Expect floral aromas, ripe stone fruits, and hints of almond from its barrel aging. A great match for risottos, fish stews, and cheeses. Best enjoyed at 8°C.
