Coll del Sabater by Escoda-Sanahuja is a natural red wine produced in the Conca de Barberà region of Catalonia, Spain. Crafted from a blend primarily of Cabernet Franc grapes, complemented by Merlot or occasionally Parellada, this wine is made following organic and biodynamic principles. The vineyard is situated at around 450 meters altitude, benefiting from clay-limestone soils and a Mediterranean climate moderated by cool sea breezes.
What makes Coll del Sabater distinctive is its artisanal production method: grapes are harvested manually and undergo spontaneous fermentation using natural yeasts in traditional clay amphorae. The wine matures on its lees for seven months in amphorae, then is bottled without any filtration, clarification, or added sulphites, preserving its authentic, vibrant character.
The result is a fresh, juicy wine with earthy aromas and subtle spices, balanced by dark cherry and plum flavors. Its persistent finish, coupled with natural acidity and texture, makes it an ideal companion for grilled meats and savory dishes. This wine beautifully reflects the winery’s commitment to minimal intervention and respect for nature.
