Linit is a white wine made entirely from Pardillo, a very old and rare white grape native to the Albacete area. The grapes come from centenarian vines in a single inland vineyard at about 700 metres altitude, where clay soils with many surface pebbles sit above a chalky base, a reminder that this place was once covered by a shallow sea.
The wine is made with a low-intervention approach: hand-harvested grapes, spontaneous fermentation with native yeasts in concrete, and ageing in concrete and neutral barrels. It is bottled unfined and unfiltered. In the glass, it shows a fresh Mediterranean style, with notes of white fruit and local herbs, good volume, lively acidity and a pleasant, slightly savoury finish. It is a good choice for those who enjoy whites with character beyond the usual grape varieties.
