Anima is a red wine made from 100% Syrah in Espira de l’Agly, in Roussillon. The grapes come from organically farmed vines on red clay–limestone soils and are picked by hand. In the cellar, the bunches are kept whole for an 8-day maceration, then the wine continues fermenting in stainless steel with only natural (indigenous) yeasts.
After malolactic fermentation, it rests for 7 months in a new 20hl oak foudre — a large barrel that adds texture and stability without making the wine feel “oaky”. Bottled unfined and unfiltered with just a very small sulphur addition, Anima is a pure, low-intervention Syrah: juicy dark fruit, a touch of spice, and a clean, dry finish. Great with grilled meats or simply on its own.
