“Luna Calmante” is Controvento’s skin-contact white from the limestone slopes of Rocca San Giovanni, a few kilometres from the Adriatic. The Mantonico grapes are hand-picked, placed whole in steel tanks and left in a gentle carbonic maceration on their skins for about ten days. Native yeasts start fermentation, and the wine rests three more months in steel before bottling – with no filtration, fining or added sulphur.
The result is a bright, lightly hazy orange-gold glass that smells of tangerine peel, grapefruit, white blossom and ripe peach, with a subtle flinty note. On the palate it is fresh and savoury, carrying a salty echo of the sea breeze that sweeps through the protected valley known as the Fosso delle Farfalle where the vines grow. Biodynamic farming and vines averaging twenty-two years old give extra depth while keeping the body lithe and easy to drink.
Pair it with sushi, seafood stews, aged cheese or even earthy dishes like porcini risotto, and let its seaside character shine.
