Merci Papa is a light, energetic red made from Grenache and Bobal. It is produced with carbonic maceration and spontaneous fermentation, then aged in demijohns before bottling without fining, filtration, or added sulfur. This gives the wine a pure, direct style that feels alive but still very clean.
In the glass, it shows fresh dark fruit, with notes of cherry, blackberry and blueberry, followed by hints of dry herbs, earth and a slight black tea touch on the finish. The texture is supple, with gentle tannin and enough freshness to keep it easy to drink.
A final personal detail makes it even more memorable: the label uses a painting Clovis Ochin made for his father in June 1987.
