Som, Bombolles is a lively ancestral sparkling wine from Penedès made from 100% Macabeo, here known as Marrameu. The grapes come from a vineyard planted in 1968, which gives the wine an extra sense of character and place. After harvest, the fruit rests in cold storage before pressing, and the wine is bottled while fermentation is still finishing, creating its natural sparkle.
This is a pét-nat with a clean, energetic style. The nose brings pear and a light salty note, while the palate feels fresh and agile, with fine bubbles, ripe pear, bright citrus and a clear chalky minerality. There is also a small touch of fennel in the finish. It is a very drinkable sparkling wine, but with enough texture and mineral depth to keep it interesting glass after glass.
