Son Llebre blanco by Cati Ribot is a lively Mallorcan white wine made in Santa Margalida, on the northeast coast of the island. Using native Giró Ros, Malvasía, and Premsal Blanc grapes grown in the region’s red clay-limestone soil (known locally as “Call vermell”), it highlights the authentic character of Mallorca. Giró Ros is pressed immediately for freshness, while the other two varieties spend a short time on the skins, adding subtle depth. Fermentation happens with native yeasts in concrete for Giró Ros and in stainless steel for the other grapes. Finally, the wine ages for six months in stainless steel with minimal added sulfur. Expect a bright, fruit-forward profile with light herbal hints, a clean finish, and a gentle Mediterranean touch.
