Cambuix is a red wine from Santa Margalida in Mallorca, born from an unexpected hailstorm that left the vines looking “dishevelled.” This local term, “Cambuix,” perfectly captures the spirit of a wine shaped by nature’s whims. Crafted from the island’s native varieties—Callet, Escursac, and Mantonegro—this bottle embodies the heart of Mallorcan viticulture.
Grown on iron-rich calcareous clay soils, the grapes follow biodynamic principles, encouraging a true expression of the land. After a brief maceration of around six days, the wine undergoes spontaneous fermentation with local yeasts. A small portion matures in French oak barrels for four months, adding subtle layers to its naturally vibrant character. Unfined and unfiltered, Cambuix balances gentle fruit notes with a lively texture, reflecting its origins without unnecessary adornment.
