El Espejo is a single-vineyard Verdejo from La Seca in Castilla y León, made from organically grown vines planted in 1999 at about 750 metres. The plot has sandy-clay soils over limestone and marl, which helps give the wine its clear saline line and firm, mineral feel.
This is not the simple, very fruity style often linked with Verdejo. The grapes are harvested by hand, fermented with native yeasts in large French oak barrels, then aged in barrel before resting in stainless steel. It is bottled without fining or filtration, keeping a direct link to the vineyard. Expect a creamy but fresh white, with notes of preserved lemon, pear, peach, toasted oats, herbs and a long, slightly salty finish.
