Chiviritero is a Verdejo from the single vineyard El Chiviritero in La Seca, one of the classic areas for this grape. The vines are around 40 years old and grow at about 750 metres above sea level, on stony soils with clay and limestone below. The vineyard is farmed organically, with biodynamic ideas, and the grapes are picked by hand.
This is not a simple, very light style of Verdejo. It ferments naturally in used French oak barrels and spends several months on its lees, which gives the wine more body and texture while keeping freshness. In the glass, it shows notes of pear, peach and lemon, with hints of dry hay, chamomile, chalk, flint and gentle spice such as clove and pepper. It feels dry, fresh and mineral, with the oak well integrated. A good match for rice dishes, pasta, roast chicken, white meats or simply a quiet glass when you want a white wine with more depth.
