Cantayano is a village Verdejo from La Seca (Castilla y León), made from organically farmed vines of around 20–30 years, planted at about 750 metres on sandy, stony soils over clay and limestone. This rocky, high-altitude terroir gives the wine its freshness and marked mineral side.
The grapes are harvested by hand, gently crushed and given a short cold maceration with the skins before pressing. Fermentation starts with native yeasts, mainly in stainless steel, with a small part in used French oak barrels. Afterwards the wine rests several months on its fine lees, with only light clarification and no filtration, to keep texture and flavour as pure as possible.
In the glass, Cantayano usually shows ripe stone fruit like peach and pear, hints of fennel and anise, a touch of toast or smoke and a subtle salty note. The palate is round yet lively, with fine acidity and a slight, refreshing bitterness on the finish that invites another sip.
