Bonnet-Ponson’s Non Dosé Cuvée Perpétuelle Rosé is a Champagne crafted from Pinot Noir, Chardonnay, and Meunier grapes grown in Chamery, Vrigny, and Coulommes in the Montagne de Reims. A small portion of Pinot Noir is added as red wine, and part of the blend comes from a perpetual reserve (solera), bringing extra depth. The wine is matured partly in stainless steel and partly in barrique before being bottled without dosage.
It shows a bright strawberry red colour with lively bubbles. Aromas include tobacco, herbs, grapefruit, wild strawberries, red peaches, apples, and a touch of warm pastry. On the palate, it is dry with vibrant acidity, light tannins, and a mix of red and yellow fruits alongside a subtle mineral note. This Champagne is made to accompany food, pairing especially well with dishes like oven-baked chicken with harissa, vegetable maklubé, or spicy sardines in olive oil.
