Bonnet-Ponson’s Cuvée Perpétuelle Non Dosé is the signature wine of this family domaine in Chamery, Montagne de Reims. It is crafted from 40% Pinot Noir, 30% Chardonnay and 30% Pinot Meunier grown in 35 Premier Cru plots, where vines average 35 years of age and soils mix sand, clay, and chalk.

The cuvée is built on a perpetual reserve: around 40% of the blend comes from earlier harvests, ensuring consistency and depth of style. Fermentation takes place mostly in stainless steel with a part in oak, followed by long ageing on the lees — at least five years in bottle — without filtration and with very little sulphur added. Disgorged without dosage, it expresses a pure extra brut character.

In the glass, it shows a golden colour with fine bubbles. Aromas of ripe apple, stone fruit, and light pastry precede a palate that combines fruit richness with a saline, mineral edge. Both round and vibrant, it works well as an aperitif but also pairs beautifully with veal, poultry, or vegetable dishes.

This Champagne reflects the Bonnet family’s tradition since 1862, now continued with organic viticulture and careful craftsmanship.
