Honey is a natural sparkling wine made entirely from Palomino, the emblematic grape of Jerez. It comes from albariza soil, which helps keep the wine fresh and clean, with a subtle mineral edge. The grapes are fully destemmed and pressed in a vertical wooden press, then fermented with native yeasts in stainless steel before ageing in bottle.
Despite its name, Honey is not heavy or overly sweet. It has a soft, rounded touch from a little residual sugar, balanced by freshness and fine bubbles. A bright and easy-going sparkling wine with a clear Andalusian character.
