The grapes are picked by hand in several passes, then fermented with the skins and a small part of the stems, adding texture and a light grip. It is aged in old cognac barrels: one part develops under a veil of flor, the natural yeast layer linked to the Jerez area, while another part is carefully topped up each week.\u003c\/p\u003e\n\n\u003cp\u003eExpect a dry, aromatic Moscatel with citrus notes, peach and apricot, balanced by a savoury, saline finish.
