It’s mostly Grüner Veltliner with Chardonnay and Riesling from the Slovenské vineyard in Moravia, farmed organically and picked by hand.\u003cbr\u003eThe wine grows in a single large oak cask, topped up every year in a kind of solera system. It began as a blend of whites that didn’t fit into other barrels and has since become its own living cuvée: foot-stomped, given a short overnight maceration, slowly pressed, then left to ferment and age spontaneously. It’s bottled unfined, unfiltered and without added sulphur, so a light haze in the glass is part of the charm.\u003cbr\u003eIn the mouth, Dopamin is mineral and gently salty, with bright notes of green and golden apple, pear, candied lemon and a hint of fennel and subtle nuttiness from the time in barrel.
