The plot has sandy-clay soils over limestone and marl, which helps give the wine its clear saline line and firm, mineral feel.\u003c\/p\u003e\n\n\u003cp\u003eThis is not the simple, very fruity style often linked with Verdejo. The grapes are harvested by hand, fermented with native yeasts in large French oak barrels, then aged in barrel before resting in stainless steel. It is bottled without fining or filtration, keeping a direct link to the vineyard.
